Snow Golems These guys are borderline useless right now (Aside from snow farming, which was not meant to be one of its uses). They can't even hurt enemies despite being a utility mob. The one place where there is an enemy they can damage (blazes) will kill them without using a fire resistance potion. They should be buffed to deal even a minuscule amount of damage to enemies (But not much, as they are much cheaper than iron golems). Alternatively, the player could feed them snow blocks to make them stronger.
Iron Golems This one is simple, and it may be getting done soon anyway with the Village & Pillage update, but these guys need a total overhaul. While they certainly have good uses, they are painfully held back in most of the ways they were intended to be used. In the ~5 years since they've been added, I have never seen one spawn in a natural village. Their spawning mechanics basically make it so rare to the point of being non-existent to most players. If Mojang is hesitant to make them more common due to iron farms, then simply make them drop iron nuggets instead. Next, for the village's main protector, they are fairly weak. I'd go as far as to suggest that projectile enemies shouldn't be able to hurt them. The village blacksmith (if there is one) could repair the golem over time.
Bats One of the first, and most egregious, additions that needs a rework. They are 100% an aesthetic mob with no uses. A simple and common suggestion is making them drop bat wings that can be used to repair elytra along side phantom membranes. They could also be used in a Sonar potion that reveals the location of enemies (Basically a potion that gives all nearby entities the glowing status effect for that player)
Endermites These guys frequently get suggestions, as their single use is being bait in endermen farms. Other than that their only notable feature is that they spawn from ender pearls. Unfortunately, they were lazy implemented using the silverfish code, making them have much of the same features which conflicts with its other coded activities (They try to enter blocks but can't). So first, they should be completely overhauled; Drop the spawning from ender pearl pocket dimensions thing, and change their model. For a start, I like the idea of endermite nests in caves in the outer end isles, or purple forests filled with alien wood in which the endermites act like termites.
Polar Bears For this one, I'm going to link a post that inspired me to make this thread. His ideas are perfect for improving these guys.
Llamas So llamas are basically horses, but worse. Their gimmick of being able to make a caravan is neat, but its not good enough to use. Not only is the current mob pathfinding system not up to the task (They can constantly get detached or stuck), causing the player more trouble than their worth, but their lackluster storage system means you're probably better off carrying the items yourself. I would ask that mobs pathfinding be improved, but I realize that is a tall order. You can ride them, but not control them. This is what needs to change. At least being able to control the lead llama would improve the system greatly. You could also make your llama spit, which will cause hit enemies to retreat momentarily.
Parrots This one is fairly short, as these guys are almost viable. Despite having many colors, being able to ride on your shoulder, and copy mob noises as a sort of detection system, they need something else to make them more than a trophy pet. A simple solution to making a mob viable is adding a drop. Others have suggested colored feathers among other things to stylize elytra, but dropping more normal feathers than chickens would suffice as well.
Drowned and everything about them Ok, this one's personal. I found the addition of drowned and them being made the providers of nautilus shells and tridents extremely lazy. While the idea of an underwater zombie is annoying considering the vast possibilities and the already large list of zombie variants, they are mostly alright. However, making them the main/only way to get the shells and tridents is terrible. Not only does it not make much sense, but we would have been better off getting an actual nautilus mob, and finding tridents in either ruins or preferably ocean monuments (Replace the gold blocks with a chest containing the trident). Drowned could still drop/use these things, but only as a very rarely for servers where most structures have been raided or all mobs have been killed.
Alright, that's it for now. I love Minecraft, I've been playing it since I was 11 back when beta 1.8 came out. But that has allowed me to study Mojang's development styles over the years. I'll be honest, ever since Notch left, Minecraft has been slowly descending into lackluster or pointless features (Especially after 1.7). They seem to be getting out of this pattern, with Update Aquatic being very ambitious and Village & Pillage being the first update focused on improving an old feature. I hope they keep this streak going by improving the things I mentioned here.

NotesThis release should fix the majority of issues people have been having. Harvesting issues, etc. Been a long time coming. Part of that was because this has been an extremely difficult update, another part was because I am rapidly losing interest in minecraft. I apologize for leaving R10 for so long with so many issues. Hopefully this one does better. I'll still do small mod updates here and there but this is probably going to be the last major update for Unabridged. If you run into any issues, I suggest trying to figure them out yourself. If it's something as simple as a config change or recipe conflict, fix it with a pull request on github, and I will accept as long as you can prove it works. From now on I am unable to dedicate time to fixing crashes or issues by myself.
By the way, Unabridged is ending with 1.7.10. I have no plans to bring it into 1.8 or 1.9.
Anyways, as usual, backup before updating. If you have trouble (world corruption) when updating an old world, try using the optional mod "ID Cleaner".
